Do bands even record like that anymore or has everyone gone past the point of irreversible laziness and launched headfirst into letting AI do everything for them?

Somewhere in-between. Most records are recorded digitally, so there's no "tapes". Makes it easier to edit and mix, but also opens the door to other forms of laziness.
