I want to trim some of the audience applause in Live at the Paradiso. When I edit the file in Audacity, will the original EQ levels remain intact? Or will I have to manually EQ each track?

After importing a file, does Audacity strip anything away from the original file? Or all settings (db, bass, treble, high) unchanged until I edit them?

I am by no means an Audacity expert, but I use it occasionally to tweak my recordings.
As long as the EQ changes you've made in saved into the .WAV file, Audacity will bring in the file as is.
