Firstly, you need to rip a CD to a WAV file. I recommend EAC. I recently downloaded the latest version and the graphical user interface has changed for the worse. If you don't like the changes, try to find an older version. EAC also has the option to use an internet database to automatcially name your files - it comes in handy.

Once you have WAV files on your PC, use Trader's Little Helper to convert to FLAC (or MP3). http://tlh.easytree.org/

Once you have encoded to FLAC, it's usually nice to add tags to the files (artist, album, track name, track number, genre etc.)
I use a media player called Foobar2000 - http://www.foobar2000.org/
Load all your FLACS into Foobar2000 - right click on each file (or groups of files) and edit the tags.

To add tags, right click on the track(s) and select "Properties". Fill out all the fields and then press "OK". Tags will automatically be saved.
